Chef Janos Wilder was one of the first to reinvent Southwestern cuisine, and the menu, wine list, and service place this restaurant among the finest in the West. The hillside location on the grounds of the Westin La Paloma is a stunning backdrop for such dishes as sweet and spicy glazed quail with butternut-squash cannelloni, salmon with a scallop mousse served on polenta, and venison loin with chile-lime paste and pecans. Have a drink or a more casual meal of Caribbean fare next door at J Bar, a lively and lower-priced venue for sampling Janos's innovative cuisine. AE, DC, MC, V. Closed Sun. No lunch.

Tucked into the foothills and surrounded by flowering gardens, this special-occasion restaurant, a favorite for locals to take out-of-town visitors, provides an alternative to the chile-laden dishes of most Southwestern nouvelle cuisine. Wild mushroom bisque, pecan-grilled buffalo, and pan-seared sea bass are among the menu choices. Tapas (and most items on the full menu) can be enjoyed on the more casual outdoor patio, accented by live Flamenco guitar music. The lavish Sunday brunch buffet is worth a splurge. AE, DC, MC, V.

This formal restaurant -- the only one in Tucson to receive Mobil's 5 stars -- is a triumph of dining elegance: muted colors, a fireplace, grand views of the city lights, and waiters who attend to every detail. The contemporary Continental menu contains such entrées as a mixed grill of game (venison, quail, and buffalo) with black barley and huckleberries, and potato-wrapped striped sea bass with spinach, tomato, and sweet-basil wine sauce.
